A delicate cacao tisane made from the roasted shells of fine-flavour cacao beans — the byproduct of Mayana's chocolate-making, transformed into an infusion. Naturally caffeine-free, rich in theobromine and antioxidants, with a smooth dark-chocolate flavour and subtle coffee notes.

Cacao husk tea is brewed the way you'd steep a herbal tea — hot water, a few minutes, no fuss. The husks themselves are what's left after Mayana cracks and winnows their fine-flavour cacao beans, which means the same heirloom Criollo cacao that goes into Mayana's chocolate elixirs, here in lighter, infusable form. Theobromine, the active compound that gives cacao its character, is a gentler cousin to caffeine — often described as grounding rather than stimulating.

Brewing instructions

  • Add 1 cup (8 oz) of hot water at 95°C / 203°F to 1 tablespoon (4 g) of cacao husks
  • Steep for 5 minutes, then strain
  • Enjoy hot or cold; add milk and sweetener to taste

About the maker

Crafted by María Mancini on the Bruce Peninsula in Ontario. Born and raised in Mexico, María draws on the Aztec and Maya traditions of her homeland, working with heirloom Fine Flavour cacao from Finca Cuatro Hermanos in Chiapas.
